Beef Chili

Ingredients

    •    2 pounds lean ground beef

    •    2 tbsp olive oil

    •    2 cups diced green pepper

    •    6 cloves  minced garlic

    •    1/4 tsp  freshly ground black pepper

    •    2 (16-ounce) cans = 2 cups undrained diced tomatoes

    •    1 cup diced celery

    •    1 cup  diced zucchini

    •    3 tbsp  cumin

    •    1-1/2 tbsp chili powder

 

Instructions

    1    Form ground beef into large patties.

    2    Heat oil in a heavy bottomed soup pot, and add freshly ground black pepper.

    3    Add bell pepper and saute 5-7 minutes. Turn heat off and stir in minced garlic.

    4    Grill patties until medium rare, no more than 5 minutes on each side.

    5    Turn heat on high under soup pot, and place patties in with garlic, oil, and peppers.

    6    Break up patties into small pieces with spatula and brown meat thoroughly. Add tomatoes undrained.

    7    Mash and break up tomatoes with spatula.

    8    Add zucchini, and celery

    9    Mix in cumin and chili powder

    10    Add enough water to cover all ingredients,

    11    Reduce heat to low, and let simmer 2 hours or more.
