Fish Wrapped in Parchment Paper
Recommended Fish: Tilapia, Mahimahi, Cod, Catfish, Halibut
1 TB of minced Garlic
1 TB dried Thyme or Dill
1 TB dried Basil
1TB dried Oregano
3 TB olive Oil
1/2 squeezed Lemon
4 filets of fish
salt and pepper4 sheets of parchment paper
Preheat the oven to 425 degrees
Mix the first five ingredients and 2 TB’s of olive oil in a bowl to create the herb mixture
Place each filet on the parchment paper
Drizzle each filet with the remaining olive oil, lemon juice, Place herb mixture on each filet , add salt and pepper
Fold paper to enclose the fish and seal by folding down the edges. Place packets on a cookie sheet lined with tin foil.
Bake for 15 minutes or until the fish flakes
Remove from parchment paper and serve
